- Step 1: Start by rinsing the sushi rice under cold water until the water runs clear. This helps remove excess starch and keeps your rice from becoming too sticky. Drain well.
- Step 2: In a rice cooker or pot, combine the rinsed rice and water. Cook according to your rice cooker’s instructions or bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20 minutes.
- Step 3: While the rice is cooking, mix the Akazu red vinegar, sugar, and salt in a small saucepan. Heat gently until the sugar and salt dissolve, then remove from heat and let it cool.
- Step 4: Once the rice is cooked, transfer it to a large bowl. Gently fold in the vinegar mixture using a wooden spatula, being careful not to mash the rice. Allow it to cool to room temperature.
- Step 5: Prepare your sushi workspace by laying out nori sheets. Place a portion of sushi rice on each sheet and spread it evenly, leaving a small border at the edges.
- Step 6: Add slices of fresh fish and vegetables on top of the rice.
- Step 7: Carefully roll the sushi using a bamboo mat, applying gentle pressure to form a tight roll.
- Step 8: Slice the sushi roll into bite-sized pieces with a sharp knife.
- Step 9: Serve with soy sauce, wasabi, and pickled ginger on the side. Enjoy!
Notes
Leftover sushi can be stored in an airtight container in the refrigerator for up to a day. However, keep in mind that the nori may lose its crisp texture. If possible, enjoy your sushi fresh for the best experience!
