Anko (Red Bean Paste)

Ingredients
  

For the Anko (Red Bean Paste)
  • 1 cup adzuki beans
  • 3 cups water
  • 3/4 cup granulated sugar
  • 1/4 teaspoon salt

Method
 

  1. Step 1: Rinse the adzuki beans under cold water and then drain them. This helps to remove any impurities.
  2. Step 2: In a pot, combine the rinsed beans and 3 cups of water. Bring this mixture to a boil over medium heat.
  3. Step 3: Once it’s boiling, reduce the heat and let it simmer for about 30 minutes, or until the beans are tender.
  4. Step 4: Drain the beans and return them to the pot. Add the sugar and salt, and cook over low heat, stirring frequently, until the mixture thickens.
  5. Step 5: Remove the pot from heat and let the Anko cool before using it or storing it in an airtight container.

Notes

Store Anko in an airtight container in the refrigerator for about a week. You can also freeze it for up to three months.
