- Step 1: Begin by rinsing the azuki beans under cold running water to remove any impurities.
- Step 2: In a large pot, combine the rinsed azuki beans and 4 cups of water. Make sure the beans are fully submerged.
- Step 3: Bring the mixture to a boil over medium-high heat.
- Step 4: Once boiling, reduce the heat to low and cover the pot. Let the beans simmer for 60 to 90 minutes, or until they are tender.
- Step 5: If desired, add salt to taste during the last few minutes of cooking.
- Step 6: Finally, drain any excess water and serve the azuki beans as desired.
Notes
Soaking the beans for a few hours can reduce cooking time, if desired. They can be stored in an airtight container in the fridge for up to 5 days.
