- Step 1: Rinse the azuki beans under cold water and drain them.
- Step 2: In a pot, combine the azuki beans and 3 cups of water. Bring to a boil, then reduce to a simmer and cook for about 1 hour, or until the beans are tender.
- Step 3: Once cooked, add the sugar and stir until it dissolves completely. Remove from heat and let it cool.
- Step 4: Blend the azuki bean mixture until smooth.
- Step 5: In a mixing bowl, combine the blended azuki beans, heavy cream, whole milk, vanilla extract, and a pinch of salt. Mix well until fully incorporated.
- Step 6: Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
- Step 7: Transfer the ice cream to a container and freeze for at least 4 hours, or until firm.
