- Step 1: In a medium saucepan, combine soy sauce, mirin, sake, sugar, garlic, ginger, and green onions. Bring to a simmer over medium heat, stirring until the sugar dissolves.
- Step 2: Place chicken thighs in the saucepan, ensuring they are fully submerged in the sauce. Add water if necessary to cover the chicken.
- Step 3: Reduce heat to low, cover the saucepan, and let the chicken simmer for about 45 minutes, turning occasionally.
- Step 4: Remove chicken from the saucepan and let it cool slightly. Strain the sauce and set aside.
- Step 5: Once cool enough to handle, slice the chicken into thin pieces.
- Step 6: In a separate pan, heat sesame oil over medium heat. Add sliced chicken and sear for about 2 minutes on each side until slightly crispy.
- Step 7: Serve the chicken slices drizzled with the reserved sauce. Enjoy!
