Ingredients
  

For the Chicken Chashu
  • 2 thighs boneless skinless chicken thighs The star of the show! Choose thighs for extra flavor and juiciness.
  • 1 cup soy sauce Adds deep umami flavor.
  • 1 cup mirin Balances the saltiness of soy sauce.
  • 1/2 cup sake Adds depth to the flavor.
  • 1/2 cup sugar For sweetness and caramelization.
  • 2 cloves garlic Crushed for aroma.
  • 1 inch ginger Sliced for warmth.
  • 2 green onions chopped For freshness.
  • 1 tbsp sesame oil For searing the chicken.

Method
 

  1. Step 1: In a medium saucepan, combine soy sauce, mirin, sake, sugar, garlic, ginger, and green onions. Bring to a simmer over medium heat, stirring until the sugar dissolves.
  2. Step 2: Place chicken thighs in the saucepan, ensuring they are fully submerged in the sauce. Add water if necessary to cover the chicken.
  3. Step 3: Reduce heat to low, cover the saucepan, and let the chicken simmer for about 45 minutes, turning occasionally.
  4. Step 4: Remove chicken from the saucepan and let it cool slightly. Strain the sauce and set aside.
  5. Step 5: Once cool enough to handle, slice the chicken into thin pieces.
  6. Step 6: In a separate pan, heat sesame oil over medium heat. Add sliced chicken and sear for about 2 minutes on each side until slightly crispy.
  7. Step 7: Serve the chicken slices drizzled with the reserved sauce. Enjoy!
