For the Chicken Stir-Fry
  • 1 lb chicken breast thinly sliced
  • 2 tbsp vegetable oil
  • 4 cloves garlic minced
  • 1 cup garlic chives
  • 1 unit bell pepper sliced
  • 1 cup broccoli florets
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce optional
  • 1 tsp cornstarch mixed with 2 tablespoons water
  • Salt and pepper
  • Cooked rice

Method
 

  1. Step 1: Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Step 2: Add the minced garlic and stir-fry for about 30 seconds until fragrant.
  3. Step 3: Add the sliced chicken breast to the skillet and cook until browned and cooked through, about 5-7 minutes.
  4. Step 4: Stir in the bell pepper and broccoli florets. Cook for an additional 3-4 minutes until the vegetables are tender-crisp.
  5. Step 5: Add the garlic chives, soy sauce, and oyster sauce (if using). Stir to combine.
  6. Step 6: Pour in the cornstarch mixture and stir until the sauce thickens, about 1-2 minutes. Season with salt and pepper to taste.
  7. Step 7: Serve the stir-fry over cooked rice and enjoy!

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. This dish also freezes well—just make sure to let it cool before transferring it to a freezer-safe container.
