Ingredients
  

For the Clam Pasta
  • 12 oz spaghetti or linguine You can use any pasta you love.
  • 2 tbsp olive oil A good quality oil enhances the flavor.
  • 4 cloves garlic minced
  • 1/2 tsp red pepper flakes optional
  • 1 can (14 oz) diced tomatoes undrained
  • 1 cup dry white wine Use one you enjoy drinking.
  • 2 cans (6.5 oz each) chopped clams drained (reserve juice)
  • 1/4 cup fresh parsley chopped

Method
 

  1. Step 1: Cook the spaghetti or linguine according to package instructions until al dente. Drain and set aside.
  2. Step 2: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing until the garlic is fragrant, about 1 minute.
  3. Step 3: Stir in the diced tomatoes and their juices. Cook for 2-3 minutes until heated through.
  4. Step 4: Add the white wine and bring to a simmer. Allow it to cook for 5-7 minutes, reducing slightly.
  5. Step 5: Add the chopped clams along with their reserved juice. Stir to combine and cook for an additional 2-3 minutes until heated.
  6. Step 6: Season with salt and black pepper to taste.
  7. Step 7: Toss the cooked pasta with the clam mixture and mix well.
  8. Step 8: Serve topped with fresh parsley and grated Parmesan cheese, if desired.

Notes

If you have leftovers, store in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop with a splash of water or broth.
