- Step 1: In a mixing bowl, combine the buckwheat flour and all-purpose flour (if using). This blend will give your noodles a lovely texture.
- Step 2: Gradually add water to the flour mixture while stirring. Keep mixing until a dough begins to form.
- Step 3: Knead the dough on a lightly floured surface for about 5-10 minutes until it becomes smooth and elastic.
- Step 4: Divide the dough into four equal portions. Cover them with a damp cloth and let them rest for 30 minutes.
- Step 5: Roll out each portion of dough into thin sheets, dusting with cornstarch or flour to prevent sticking.
- Step 6: Cut the rolled dough into thin noodles, about 1/4 inch wide.
- Step 7: Bring a large pot of water to a boil. Add the noodles and cook for 4-5 minutes, or until tender.
- Step 8: Drain the noodles and rinse them under cold water to stop the cooking process.
- Step 9: Serve the soba noodles warm or cold, drizzled with soy sauce, or in a broth, as desired.
Notes
If you have leftovers, simply store them in an airtight container in the refrigerator. They will keep for about 3-4 days.
