- Step 1: Start by cooking the soba noodles according to the package instructions. Once they're done, drain them and set them aside.
- Step 2: In a small saucepan, combine soy sauce, mirin, sake, and sugar. Heat over medium heat until the sugar dissolves, then remove from heat.
- Step 3: In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and sauté until it's fragrant—just a minute or so.
- Step 4: Next, toss in your chopped vegetables and stir-fry them until they are tender.
- Step 5: Toss the cooked soba noodles into the skillet with the sautéed vegetables, then pour the sauce over the mixture. Stir well to combine everything.
- Step 6: Serve hot, garnished with chopped green onions and a sprinkle of sesame seeds. Enjoy!
Notes
If you're feeling creative, try using udon noodles instead of soba for a chewier texture. Add protein like tofu, chicken, or shrimp for a heartier meal.
