Ingredients
  

For the Stir-Fry
  • 1 lb pork tenderloin thinly sliced
  • 1 large eggplant cut into bite-sized pieces
  • 2 tbsp vegetable oil
  • 3 cloves garlic minced
  • 1 tbsp ginger grated
  • 1 medium red bell pepper sliced
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp rice vinegar
  • 1 tsp sugar
For Serving
  • cooked rice
  • chopped green onions for garnish

Method
 

  1. Step 1: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced pork and season it with salt and pepper. Stir-fry until the pork is browned and cooked through, about 5-7 minutes. Remove the pork from the skillet and set it aside.
  2. Step 2: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger, and stir-fry for about 30 seconds until fragrant.
  3. Step 3: Add the eggplant and red bell pepper to the skillet. Stir-fry for about 5-6 minutes, or until the vegetables are tender and beautifully vibrant.
  4. Step 4: Return the cooked pork to the skillet. In a small bowl, mix together the soy sauce, oyster sauce, rice vinegar, and sugar. Pour the sauce over the pork and vegetables, stirring to combine everything nicely.
  5. Step 5: Cook for an additional 2-3 minutes, allowing the flavors to meld together. Adjust seasoning with salt and pepper if needed.
  6. Step 6: Serve the stir-fry over cooked rice and garnish with the chopped green onions. Enjoy!

Notes

Store leftovers in the refrigerator for up to 3 days. Reheat in a skillet or microwave.
