- Step 1: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced pork and season it with salt and pepper. Stir-fry until the pork is browned and cooked through, about 5-7 minutes. Remove the pork from the skillet and set it aside.
- Step 2: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger, and stir-fry for about 30 seconds until fragrant.
- Step 3: Add the eggplant and red bell pepper to the skillet. Stir-fry for about 5-6 minutes, or until the vegetables are tender and beautifully vibrant.
- Step 4: Return the cooked pork to the skillet. In a small bowl, mix together the soy sauce, oyster sauce, rice vinegar, and sugar. Pour the sauce over the pork and vegetables, stirring to combine everything nicely.
- Step 5: Cook for an additional 2-3 minutes, allowing the flavors to meld together. Adjust seasoning with salt and pepper if needed.
- Step 6: Serve the stir-fry over cooked rice and garnish with the chopped green onions. Enjoy!
