Ingredients
  

For the Fukujinzuke
  • 1 cup daikon radish diced
  • 1/2 cup cucumber diced
  • 1/2 cup carrot diced
  • 1/4 cup eggplant diced
  • 1/4 cup ginger finely chopped
  • 1/2 cup rice vinegar
  • 1/2 cup sugar
  • 1/4 cup soy sauce
  • 1 teaspoon salt

Method
 

  1. Step 1: In a bowl, combine the diced daikon radish, cucumber, carrot, eggplant, and ginger. Mix them well and set aside.
  2. Step 2: In a separate saucepan, combine rice vinegar, sugar, soy sauce, and salt. Heat over medium heat, stirring until the sugar dissolves completely.
  3. Step 3: Pour the vinegar mixture over the vegetables and stir to combine all the ingredients.
  4. Step 4: Let the mixture cool to room temperature, then transfer it to an airtight container.
  5. Step 5: Refrigerate for at least 24 hours before serving to allow the flavors to meld beautifully.

Notes

Store your Fukujinzuke in an airtight container in the refrigerator. It will stay fresh for about 2 weeks. Just make sure to give it a good stir before serving, as some settling may occur.
