For the Garlic Onion Chicken
  • 4 pieces boneless, skinless chicken breasts the star of the show, juicy and tender
  • 4 cloves garlic minced
  • 1 large onion sliced
  • 3 tbsp olive oil for sautéing and adding richness
  • 1 tsp salt essential for enhancing flavors
  • 1/2 tsp black pepper a little kick to balance the dish
  • 1 tsp dried thyme brings a lovely herbaceous note
  • 1 tsp paprika adds color and a hint of smokiness
  • 1/2 cup chicken broth keeps the chicken moist and adds depth to the flavor
  • fresh parsley chopped (for garnish)

Equipment

  • Large Skillet
  • Oven

Method

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: In a large skillet, heat the olive oil over medium heat. Add the sliced onion and sauté until translucent, about 5 minutes.
  3. Step 3: Add the minced garlic to the skillet and cook for an additional 1-2 minutes, until fragrant.
  4. Step 4: Season the chicken breasts with salt, black pepper, thyme, and paprika.
  5. Step 5: Push the onion and garlic mixture to one side of the skillet and place the chicken breasts in the skillet. Sear for 3-4 minutes on each side until browned.
  6. Step 6: Pour the chicken broth into the skillet, ensuring the chicken is partially submerged.
  7. Step 7: Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  8. Step 8: Remove from the oven and let rest for a few minutes. Garnish with chopped parsley before serving.

Notes

Leftovers? No problem! You can store Garlic Onion Chicken in an airtight container in the refrigerator for up to 3 days. If you want to keep it longer, it freezes beautifully. Just make sure to wrap it tightly to avoid freezer burn. Reheat in the oven or microwave before serving!
