- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: In a large skillet, heat the olive oil over medium heat. Add the sliced onion and sauté until translucent, about 5 minutes.
- Step 3: Add the minced garlic to the skillet and cook for an additional 1-2 minutes, until fragrant.
- Step 4: Season the chicken breasts with salt, black pepper, thyme, and paprika.
- Step 5: Push the onion and garlic mixture to one side of the skillet and place the chicken breasts in the skillet. Sear for 3-4 minutes on each side until browned.
- Step 6: Pour the chicken broth into the skillet, ensuring the chicken is partially submerged.
- Step 7: Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Step 8: Remove from the oven and let rest for a few minutes. Garnish with chopped parsley before serving.
Notes
Leftovers? No problem! You can store Garlic Onion Chicken in an airtight container in the refrigerator for up to 3 days. If you want to keep it longer, it freezes beautifully. Just make sure to wrap it tightly to avoid freezer burn. Reheat in the oven or microwave before serving!
