- Step 1: Start by bringing 4 cups of water to a boil in a large pot.
- Step 2: Add the gluten-free rice noodles to the boiling water and cook according to package instructions until tender. Once cooked, drain and set aside.
- Step 3: In a large skillet or wok, heat the sesame oil over medium heat.
- Step 4: Add the minced garlic and ginger, sautéing for about 1 minute until fragrant.
- Step 5: Next, toss in the julienned carrot, sliced bell pepper, and broccoli florets. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Step 6: Add the cooked noodles to the skillet along with the soy sauce. Toss everything together to combine and heat through.
- Step 7: Season with salt and pepper to taste.
- Step 8: Remove from heat and garnish with chopped green onions before serving.
Notes
If you have leftovers, store them in an airtight container in the fridge for up to 3 days. Reheat in a skillet over medium heat, adding a splash of water or more sauce to keep them moist and delicious.
