Ingredients
  

For the Sushi Rice
  • 2 cups sushi rice sticky and flavorful
  • 2.5 cups water essential for cooking rice
  • 0.25 cup rice vinegar adds tangy flavor
  • 2 tbsp sugar balances the vinegar
  • 1 tsp salt enhances all flavors
For the Toppings
  • 0.5 cup pink pickled daikon sliced
  • 0.5 cup shrimp cooked and peeled
  • 0.5 cup boiled chicken shredded
  • 0.5 cup carrot thinly sliced
  • 0.5 cup cucumber thinly sliced
  • 0.25 cup lotus root sliced and boiled

Method
 

  1. Step 1: Rinse the sushi rice under cold water until the water runs clear.
  2. Step 2: In a rice cooker, combine the rinsed sushi rice and water. Cook according to the rice cooker instructions or in a pot on the stove.
  3. Step 3: Prepare the vinegar mixture by heating rice vinegar, sugar, and salt in a small saucepan until the sugar dissolves. Let it cool.
  4. Step 4: Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Let it cool to room temperature.
  5. Step 5: On a serving platter, create a layer of sushi rice, shaping it into a decorative mound.
  6. Step 6: Arrange the pink pickled daikon, shrimp, boiled chicken, carrot, cucumber, and lotus root on top of the rice.
  7. Step 7: Add decorative toppings as desired.
  8. Step 8: Serve immediately or refrigerate briefly before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. Add a splash of water before reheating if the rice dries out.
