Method

  3. Step 3: Reduce the heat to low and add the curry powder, garam masala, sugar, salt, black pepper, and cayenne pepper (if using). Stir well to ensure everything is combined.
  4. Step 4: Continue to cook for an additional 2-3 minutes, stirring frequently to prevent burning.
  5. Step 5: Remove the saucepan from heat and allow the roux to cool before storing it in an airtight container.
