Method
- Step 1: Begin by peeling the shrimp, leaving the tails intact for that beautiful presentation.
- Step 2: Devein the shrimp by making a shallow incision along the back and carefully remove the dark intestinal vein.
- Step 3: Rinse the shrimp under cold water to wash away any remaining debris.
- Step 4: Pat the shrimp dry with paper towels to remove excess moisture.
- Step 5: To straighten the shrimp, make 2-3 small cuts on the underside of the shrimp's body, being careful not to cut all the way through.
- Step 6: Sprinkle a small amount of salt over the shrimp and let them sit for a few minutes.
- Step 7: Prepare a bowl of ice water and place the shrimp in it for a few minutes to firm them up.
- Step 8: Remove the shrimp from the ice water and pat them dry once more.
- Step 9: Lightly dust the shrimp with cornstarch or flour before cooking.
Notes
If you have any leftovers, place the shrimp in an airtight container and refrigerate. They are best eaten within 1-2 days.
