Ingredients
  

For the Japanese Noodles
  • 200 g soba noodles
  • 1 liter water for boiling the noodles
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tsp sesame oil
  • 1 piece green onion finely chopped
  • 1 tbsp sesame seeds toasted

Method
 

  1. Step 1: Bring 1 liter of water to a boil in a pot.
  2. Step 2: Add the soba noodles to the boiling water and cook according to package instructions until al dente.
  3. Step 3: Drain the noodles and rinse them under cold water to stop the cooking process.
  4. Step 4: In a small bowl, mix together soy sauce, mirin, and sesame oil.
  5. Step 5: In a serving bowl, combine the cooked soba noodles with the sauce and toss to coat.
  6. Step 6: Add the chopped green onion and toasted sesame seeds, mixing well.
  7. Step 7: If desired, add sliced vegetables and/or protein, and toss again.
  8. Step 8: Serve immediately, garnished with additional green onion and sesame seeds if desired.

Notes

If you have leftovers, store them in an airtight container in the fridge for up to 2 days. Just keep in mind that the noodles may absorb some of the sauce, so you might want to add a little extra soy sauce when reheating!
