- Step 1: In a bowl, combine rice flour and water to create a smooth batter. Make sure there are no lumps!
- Step 2: Heat a non-stick skillet over medium heat and pour a ladle of the batter to form a pancake. Cook until bubbles form on the surface, then flip and cook until golden brown. Repeat with the remaining batter.
- Step 3: In a separate saucepan, combine soy sauce, mirin, and dashi broth. Bring to a simmer and set aside.
- Step 4: In another skillet, heat oil over medium heat. Sauté the shredded cabbage, shiitake mushrooms, and green onions until softened.
- Step 5: Assemble the pancakes by spreading a layer of sweet red bean paste on each pancake. Add the sautéed vegetables on top, roll it up, and secure with a skewer.
- Step 6: Serve the rolled pancakes drizzled with the soy sauce mixture and garnish with bonito flakes. Enjoy!
Notes
Leftovers can be refrigerated for up to 3 days. Reheat in a skillet or microwave before serving.
