- Step 1: Rinse the sushi rice under cold water until the water runs clear. This removes excess starch, ensuring your rice cooks perfectly. Drain well.
- Step 2: In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is tender and the water is absorbed.
- Step 3: In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Set aside; this mixture will bring your rice to life.
- Step 4: Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.
- Step 5: Prepare the vegetables: slice the cucumber, julienne the carrot, and slice the avocado.
- Step 6: Lay a sheet of nori on a bamboo sushi mat or a clean surface. With wet hands, spread a thin layer of sushi rice evenly over the nori, leaving a 1-inch border at the top.
- Step 7: Arrange a line of cucumber, carrot, avocado, and edamame along the bottom edge of the rice-covered nori.
- Step 8: Using the mat, carefully roll the nori away from you, tucking in the filling as you go. Roll tightly to ensure the sushi holds its shape.
- Step 9: Once rolled, use a sharp knife to slice the sushi into bite-sized pieces.
- Step 10: Repeat the process with the remaining nori sheets and fillings.
- Step 11: Serve the sushi with soy sauce, pickled ginger, and wasabi on the side to enhance your meal.
Notes
Leftover sushi can be a tasty treat for the next day. Store sushi rolls in an airtight container in the refrigerator for up to 24 hours.
