Ingredients
  

Rice Base
  • 1 cup rice jasmine or basmati recommended
  • 2 cups water
  • 1 tbsp olive oil adds richness
  • 1 tsp salt enhances flavors
  • 1 tsp black pepper for a little kick
Mixed Vegetables
  • 1 cup mixed vegetables carrots, peas, bell peppers
  • 2 cloves garlic minced
  • 1 tsp soy sauce adds savory depth
Garnish
  • fresh herbs

Method
 

  1. Step 1: Rinse the rice under cold water until the water runs clear.
  2. Step 2: In a pot, combine the rinsed rice, water, olive oil, salt, and black pepper. Bring to a boil over medium-high heat.
  3. Step 3: Once boiling, reduce the heat to low, cover, and let it simmer for 18-20 minutes.
  4. Step 4: While the rice is cooking, heat olive oil in a separate pan over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  5. Step 5: Add the mixed vegetables to the pan and cook until tender, about 5-7 minutes.
  6. Step 6: Once the rice is done, fluff it with a fork, then stir it into the pan with the vegetables. Add the soy sauce and mix well.
  7. Step 7: Serve hot, garnished with fresh herbs if desired.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Reheat on the stovetop or in the microwave.
