Ingredients
  

For the Kare Kare
  • 1 kg oxtail cut into pieces
  • 1/2 cup peanut butter
  • 1/4 cup ground rice
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 1/2 kg eggplant sliced
  • 1/2 kg banana heart sliced
  • 1/2 kg green beans trimmed
  • 6 cups water

Method
 

  1. Step 1: In a large pot, heat some oil over medium heat. Sauté the garlic and onion until fragrant, about 2-3 minutes.
  2. Step 2: Add the oxtail and cook until browned on all sides, about 5-7 minutes.
  3. Step 3: Pour in the water and bring to a boil. Reduce the heat to low and let it simmer for about 2 hours or until the oxtail is tender and falls off the bone.
  4. Step 4: Once tender, stir in the ground rice and peanut butter until well combined.
  5. Step 5: Next, add the sliced eggplant, banana heart, and green beans. Continue to simmer for an additional 15-20 minutes, or until the vegetables are tender.
  6. Step 6: Season with salt and pepper to taste.
  7. Step 7: Serve hot, paired with shrimp paste on the side for that extra burst of flavor!

Notes

Allow it to cool completely before transferring it to an airtight container. It can be stored in the refrigerator for up to 3 days or frozen for up to a month.
