- Step 1: In a skillet, combine the dashi broth, soy sauce, mirin, and sugar. Bring it to a simmer over medium heat.
- Step 2: Add the sliced onion to the skillet and cook until it softens and becomes translucent.
- Step 3: Gently place the sliced pork cutlet into the skillet, ensuring it is covered by the flavorful liquid.
- Step 4: In a bowl, beat the eggs until well mixed. Pour the beaten eggs over the pork and onion mixture in the skillet.
- Step 5: Cover the skillet and cook until the eggs are set, about 3 to 5 minutes.
- Step 6: Serve the cooked mixture over a bowl of warm rice.
- Step 7: Garnish with chopped green onions and serve with pickled ginger if desired.
