Ingredients
  

For the Kimchi Jjigae
  • 2 cups kimchi chopped
  • 1 cup pork belly or tofu diced
  • 1 medium onion sliced
  • 2 green onions chopped
  • 2 cloves garlic minced
  • 1 tbsp gochugaru Korean red pepper flakes
  • 1 tbsp soy sauce
  • 4 cups water or vegetable broth the base of your stew
  • 1 tbsp sesame oil adds a nutty aroma

  • 1 cup mushrooms sliced

Method
 

  1. Step 1: In a large pot, heat the sesame oil over medium heat. Add the diced pork belly or tofu and cook until browned, about 5-7 minutes.
  2. Step 2: Add the chopped kimchi, sliced onion, and minced garlic to the pot. Sauté for about 5 minutes until the onions become translucent and fragrant.
  3. Step 3: Stir in the gochugaru and soy sauce, mixing everything well to coat the ingredients.
  4. Step 4: Pour in the water or vegetable broth and bring the mixture to a boil.
  5. Step 5: Reduce the heat and let it simmer for 20-30 minutes.
  6. Step 6: If you're using mushrooms, add them along with the chopped green onions and cook for an additional 5 minutes.
  7. Step 7: Season with salt to taste before serving. Enjoy your Kimchi Jjigae hot and steamy!

Notes

Store your Kimchi Jjigae in an airtight container in the fridge for up to 3 days. When you're ready to enjoy it again, simply reheat on the stovetop or in the microwave.
