- Step 1: Preheat your oven to 375°F (190°C). Grease a madeleine pan with butter and dust it with a little flour to prevent sticking.
- Step 2: In a bowl, sift together the flour, baking powder, and salt.
- Step 3: In a separate mixing bowl, whisk together the melted butter and granulated sugar until well combined.
- Step 4: Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract and lemon zest if you’re using it.
- Step 5: Gradually fold the dry ingredients into the wet mixture until just combined.
- Step 6: Spoon the batter into the prepared madeleine pan, filling each mold about three-quarters full.
- Step 7: Bake for 10-12 minutes, or until the edges are golden and the centers spring back when lightly touched.
- Step 8: Remove from the oven and let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
- Step 9: Dust with powdered sugar before serving, if desired.
