- Step 1: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Step 2: Cream together the softened butter and granulated sugar until light and fluffy.
- Step 3: Add the egg and vanilla extract to the butter mixture, mixing until well combined.
- Step 4: In a separate bowl, whisk together the flour, baking powder, and salt.
- Step 5: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Step 6: Divide the dough in half. In one half, mix in the matcha powder until fully incorporated. In the other half, mix in the cocoa powder.
- Step 7: Roll each dough portion into a log about 1 inch in diameter. Wrap in plastic wrap and refrigerate for at least 1 hour.
- Step 8: Once chilled, slice each log into 1/4 inch thick rounds.
- Step 9: Arrange the slices on the prepared baking sheet, alternating between the matcha and cocoa cookies to create a checkerboard pattern.
- Step 10: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Step 11: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Store your cookies in an airtight container at room temperature for up to a week. If you want to keep them fresh longer, you can freeze them for up to three months.
