Ingredients
  

For the Miso Butter Cookies
  • 1 cup unsalted butter softened
  • 1/2 cup white miso paste
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Flaky sea salt for topping (optional)

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Step 2: In a large bowl, cream together the softened butter, miso paste, brown sugar, and granulated sugar until light and fluffy. This should take about 3-5 minutes.
  3. Step 3: Add the eggs and vanilla extract to the mixture, and beat until well combined.
  4. Step 4: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Step 5: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix!
  6. Step 6: Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Step 7: If desired, sprinkle a small amount of flaky sea salt on top of each cookie for that extra touch.
  8. Step 8: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  9. Step 9: Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

These cookies can be stored in an airtight container at room temperature for up to a week. For longer storage, freeze them for up to three months.
