Ingredients
  

For the Mizutaki
  • 1 whole chicken cut into pieces
  • 8 cups dashi broth or water
  • 1 cup sake
  • 1 cup soy sauce
  • 2 tbsp mirin
  • 1 block tofu cut into cubes
  • 2 cups napa cabbage chopped
  • 1 cup shiitake mushrooms sliced
  • 1 cup green onions cut into 2-inch pieces
  • 1 cup carrots thinly sliced
  • 1 cup daikon radish thinly sliced
For Serving
  • cooked rice or noodles
  • ponzu sauce

Method
 

  1. Step 1: In a large pot, combine the dashi broth, sake, soy sauce, and mirin. Bring it to a gentle simmer over medium heat.
  2. Step 2: Add the chicken pieces to the pot and cook until they are fully cooked, about 15-20 minutes.
  3. Step 3: Once the chicken is cooked, add the tofu, napa cabbage, shiitake mushrooms, green onions, carrots, and daikon radish to the pot.
  4. Step 4: Continue to simmer for another 10-15 minutes, until the vegetables are tender.
  5. Step 5: Serve hot with cooked rice or noodles and a side of ponzu sauce for dipping.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stove or in the microwave.
