Ingredients
  

For the Mochi
  • 2 cups glutinous rice (mochi rice) key for chewy texture
  • 1 cup water for soaking the rice
  • Cornstarch
  • Optional fillings

Method
 

  1. Step 1: Rinse glutinous rice under cold water until water runs clear.
  2. Step 2: Soak the rice in water for at least 8 hours or overnight.
  3. Step 3: Drain and steam the rice for about 30-40 minutes until translucent and sticky.
  4. Step 4: Transfer rice to a bowl, let cool slightly, then pound and knead until smooth.
  5. Step 5: Dust a surface with cornstarch, shape mochi dough into discs.
  6. Step 6: If using fillings, flatten mochi, add filling, and seal.
  7. Step 7: Dust finished mochi with cornstarch and serve or store.

Notes

Store mochi in an airtight container at room temperature for up to 2-3 days. Dust with cornstarch before freezing to prevent sticking.
