- Step 1: In a large pot, heat the sesame oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant.
- Step 2: Add the sliced onion and continue to sauté until it becomes translucent.
- Step 3: Next, add the beef or pork offal to the pot and cook until it’s nicely browned.
- Step 4: Pour in the dashi broth, soy sauce, sake, and mirin. Bring everything to a gentle simmer.
- Step 5: Add the chopped napa cabbage and shiitake mushrooms to the pot. Let them cook for about 5-10 minutes, until the vegetables are tender.
- Step 6: Gently add the tofu cubes and let it simmer for an additional 5 minutes.
- Step 7: Season with salt and pepper to taste.
- Step 8: Serve hot, garnished with chopped green onions, alongside cooked rice.
Notes
Leftovers can be stored in the refrigerator for up to 3 days. Reheat gently on the stove, adding a splash of water or broth to loosen it up.
