- Step 1: In a large pot, brown the oxtail pieces over medium heat until they're well-seared on all sides. Remove the oxtail and set it aside.
- Step 2: In the same pot, add the chopped onion, sliced carrots, chopped celery, and minced garlic. Sauté until the vegetables are softened, about 5-7 minutes.
- Step 3: Add the diced tomatoes and diced beet to the pot, followed by the browned oxtail. Stir everything together.
- Step 4: Pour in the beef broth and red wine. Stir in the soy sauce, Worcestershire sauce, bay leaf, black pepper, and salt.
- Step 5: Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for 2.5 to 3 hours, or until the oxtail is tender.
- Step 6: Remove the bay leaf and adjust the seasoning if necessary. Taste and make it your own!
- Step 7: Serve hot, garnished with fresh parsley. Enjoy every spoonful!
