Oxtail Soup – Hong Kong Style Borscht

  • 2 lbs oxtail cut into pieces
  • 1 large onion chopped
  • 2 medium carrots sliced
  • 2 stalks celery chopped
  • 14 oz diced tomatoes canned
  • 1 medium beet peeled and diced
  • 6 cups beef broth
  • 1 cup red wine
  • 2 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 leaf bay leaf
  • 1 tsp black pepper
  • to taste salt
  • for garnish fresh parsley chopped

Method
 

  1. Step 1: In a large pot, brown the oxtail pieces over medium heat until they're well-seared on all sides. Remove the oxtail and set it aside.
  2. Step 2: In the same pot, add the chopped onion, sliced carrots, chopped celery, and minced garlic. Sauté until the vegetables are softened, about 5-7 minutes.
  3. Step 3: Add the diced tomatoes and diced beet to the pot, followed by the browned oxtail. Stir everything together.
  4. Step 4: Pour in the beef broth and red wine. Stir in the soy sauce, Worcestershire sauce, bay leaf, black pepper, and salt.
  5. Step 5: Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for 2.5 to 3 hours, or until the oxtail is tender.
  6. Step 6: Remove the bay leaf and adjust the seasoning if necessary. Taste and make it your own!
  7. Step 7: Serve hot, garnished with fresh parsley. Enjoy every spoonful!

Notes
