Method
 

  1. Step 1: Preheat your oven to 325°F (163°C). Remember, do not grease the chiffon cake pan; this is crucial for the cake to rise properly.
  2. Step 2: In a large mixing bowl, sift together the flour, sugar, baking powder, and salt.
  3. Step 3: In a separate bowl, combine the vegetable oil, egg yolks, water, vanilla extract, and lemon juice. Whisk until smooth.
  4. Step 4: Add the wet ingredients to the dry ingredients and mix until just combined. Avoid over-mixing!
  5. Step 5: In another bowl, beat the egg whites until stiff peaks form. This step is essential for that airy texture.
