  • 1 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 cup water to dissolve ingredients and create brine

Method

  3. Step 3: Add the water to the mixture and stir until the sugar and salt are fully dissolved.
  4. Step 4: Place the sliced daikon into a clean jar or container.
  5. Step 5: Pour the shio koji mixture over the daikon, ensuring that all pieces are submerged.
  6. Step 6: Seal the jar and refrigerate for at least 24 hours to allow the flavors to develop.
