- Step 1: In a large pot, heat the sesame oil over medium heat. Add the minced garlic and sliced onion, sautéing until fragrant.
- Step 2: Add the sliced pork to the pot and cook until browned, which should take about 3-4 minutes.
- Step 3: Stir in the grated ginger, sliced carrot, and mushrooms, cooking for an additional 2-3 minutes until the veggies start to soften.
- Step 4: Pour in the chicken or vegetable broth and water. Bring to a boil.
- Step 5: Once boiling, reduce the heat to a simmer and add the soy sauce, salt, and pepper.
- Step 6: Gently add the cubed tofu to the pot and let simmer for 10-15 minutes to allow the flavors to meld together.
- Step 7: Taste and adjust seasoning if necessary, then serve hot, garnished with chopped green onions.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. If you're planning to keep it longer, consider freezing the soup for up to a month.
