Quick and Refreshing Seaweed Salad

A delightful seaweed salad that’s a refreshing treat and super easy to whip up at home. Perfect for summer picnics or as a light meal!

Ingredients
  

For the Seaweed Salad
  • 1 cup dried seaweed wakame or kombu
  • 2 cups water for soaking
  • 1 medium cucumber thinly sliced
  • 1 medium carrot julienned
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • 1 tbsp sesame seeds for garnish
  • Salt to taste

Method
 

  1. Step 1: Rinse the dried seaweed under cold water to remove any excess salt or debris.
  2. Step 2: Soak the seaweed in 2 cups of water for about 10-15 minutes, or until it expands and becomes tender. Drain and set aside.
  3. Step 3: While the seaweed is soaking, slice your cucumber and julienne the carrot.
  4. Step 4: In a separate small bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, and a pinch of salt until the sugar is dissolved.
  5. Step 5: Add the soaked seaweed to the bowl with the cucumber and carrot.
  6. Step 6: Pour the dressing over the salad and toss gently to combine all ingredients.
  7. Step 7: Sprinkle with sesame seeds before serving. Enjoy chilled or at room temperature!

Notes

Store leftovers in an airtight container in the fridge. Best enjoyed within a couple of days.
