Ingredients
  

For the Soup
  • 300 g salmon fillet skin removed
  • 200 g daikon radish sliced
  • 100 g carrots sliced
  • 100 g shiitake mushrooms sliced
  • 1 cup tofu cubed
  • 4 cups dashi Japanese soup stock
  • 3 tbsp soy sauce
  • 1 tbsp mirin
  • 2 green onions chopped for garnish

Method
 

  1. Step 1: In a pot, bring the dashi to a simmer over medium heat.
  2. Step 2: Add the sliced daikon, carrots, and shiitake mushrooms to the pot. Cook for about 10 minutes, or until the vegetables are tender.
  3. Step 3: Gently add the salmon fillet to the pot and cook for an additional 5 minutes, or until the salmon is cooked through.
  4. Step 4: Stir in the tofu, soy sauce, and mirin. Cook for another 2-3 minutes to let the flavors meld and heat through.
  5. Step 5: Season with salt to taste. Serve hot, garnished with chopped green onions.
