Ingredients
  

For the Shabu Shabu
  • 1 lb thinly sliced beef such as ribeye or sirloin
  • 4 cups dashi broth or water
  • 2 cups Napa cabbage, chopped
  • 1 cup shiitake mushrooms, sliced
  • 1 cup tofu, sliced
  • 1 cup carrots, julienned
  • 1 cup green onions, cut into 2-inch pieces
  • 1 cup bean sprouts
Dipping sauces
  • soy sauce
  • sesame sauce
  • ponzu sauce

Method
 

  1. Step 1: In a large pot, bring the dashi broth or water to a gentle simmer over medium heat.
  2. Step 2: While the broth is heating up, arrange the sliced beef, Napa cabbage, shiitake mushrooms, tofu, carrots, green onions, and bean sprouts on a large serving platter.
  3. Step 3: Once the broth is simmering, using chopsticks or a slotted spoon, dip the beef slices into the broth for a few seconds until cooked to your liking.
  4. Step 4: Add your favorite vegetables and tofu to the broth, cooking them for a few minutes until they are tender and delicious.
  5. Step 5: Serve the cooked ingredients alongside soy sauce, sesame sauce, and ponzu sauce for dipping.

Notes

Cool the cooked ingredients and broth completely before storing them in airtight containers. Refrigerate for up to 3 days. Reheat gently on the stove when you're ready to enjoy again.
