- Step 1: In a saucepan, combine the water and sugar. Heat over medium heat, stirring until the sugar is completely dissolved.
- Step 2: Remove the saucepan from heat and add the chopped shiso leaves. Allow the mixture to steep for about 15 minutes, letting the flavors infuse.
- Step 3: Strain the mixture through a fine sieve to remove the shiso leaves. Press the leaves gently to extract as much liquid as possible.
- Step 4: Stir in the lemon juice and a pinch of salt, mixing well.
- Step 5: Pour the strained mixture into a shallow container and place it in the freezer.
- Step 6: After about 1 hour, stir the sorbet with a fork to break up any ice crystals. Repeat this process every 30 minutes until the sorbet is fully frozen and has a fluffy texture. This should take about 2-3 hours in total.
- Step 7: Serve the shiso sorbet in chilled bowls or glasses. Enjoy your unique creation!

Store any leftover shiso sorbet in an airtight container in the freezer for about a week.
