Ingredients
  

For the Shiso Sorbet
  • 1 cup fresh shiso leaves chopped
  • 1 cup water
  • 1 cup sugar
  • 1 tbsp lemon juice
  • 1 pinch salt

Method
 

  1. Step 1: In a saucepan, combine the water and sugar. Heat over medium heat, stirring until the sugar is completely dissolved.
  2. Step 2: Remove the saucepan from heat and add the chopped shiso leaves. Allow the mixture to steep for about 15 minutes, letting the flavors infuse.
  3. Step 3: Strain the mixture through a fine sieve to remove the shiso leaves. Press the leaves gently to extract as much liquid as possible.
  4. Step 4: Stir in the lemon juice and a pinch of salt, mixing well.
  5. Step 5: Pour the strained mixture into a shallow container and place it in the freezer.
  6. Step 6: After about 1 hour, stir the sorbet with a fork to break up any ice crystals. Repeat this process every 30 minutes until the sorbet is fully frozen and has a fluffy texture. This should take about 2-3 hours in total.
  7. Step 7: Serve the shiso sorbet in chilled bowls or glasses. Enjoy your unique creation!

Notes

Store any leftover shiso sorbet in an airtight container in the freezer for about a week.
