Method
 

  1. Step 1: Start by cooking the soba noodles according to the package instructions. Once they are done, drain them and set aside.
  2. Step 2: In a large pot, combine the vegetable broth, water, soy sauce, sesame oil, grated ginger, and minced garlic. Bring this mixture to a simmer over medium heat.
  3. Step 3: Add the sliced shiitake mushrooms, chopped bok choy, and julienned carrot to the pot. Cook for about 5-7 minutes until the vegetables are tender.
  4. Step 4: Divide the cooked soba noodles into serving bowls. Pour the hot soup and vegetables over the noodles.
  5. Step 5: Garnish with chopped green onions, fresh cilantro, and chili flakes if you like a bit of spice. Serve immediately and enjoy!

Notes

Leftover Soba Noodle Soup can be stored in an airtight container in the fridge for up to 3 days. Keep the noodles separate from the broth if reheating.
