- Step 1: In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, and sauté until fragrant, about 1-2 minutes.
- Step 2: Add the sliced pork belly to the pot and cook until browned, stirring occasionally for about 5 minutes.
- Step 3: Pour in the dashi broth and bring to a simmer.
- Step 4: Stir in the miso paste and soy sauce, mixing well until the miso is fully dissolved.
- Step 5: Add the bean sprouts and chili paste, and simmer for an additional 5 minutes.
- Step 6: Season with salt and pepper to taste.
- Step 7: Serve hot, garnished with chopped green onions.
Notes
This soup can be stored in an airtight container in the fridge for up to 3 days. For best texture, add bean sprouts fresh when serving.
