Taiwanese Hot Pot and Homemade Meatballs

Ingredients
  

For the Meatballs
  • 1 lb ground pork
  • 0.5 lb ground beef
  • 0.25 cup green onions finely chopped
  • 2 cloves garlic minced
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp ginger grated
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.25 cup breadcrumbs
For the Hot Pot Broth
  • 6 cups chicken or vegetable broth
  • 2 cups water
  • 2 tbsp soy sauce
  • 1 tbsp rice wine
  • 1 tbsp goji berries
  • 1 tbsp ginger sliced
  • 2 cloves garlic smashed
For Hot Pot Ingredients
  • 1 cup mushrooms sliced (shiitake, enoki, or your choice)
  • 1 cup bok choy chopped
  • 1 cup napa cabbage chopped
  • 1 cup tofu sliced
  • 1 cup thinly sliced beef or pork
  • 1 cup shrimp peeled and deveined
  • Assorted dipping sauces

Method
 

  1. Step 1: In a large bowl, combine the ground pork, ground beef, green onions, garlic, soy sauce, sesame oil, ginger, salt, pepper, breadcrumbs, and egg. Mix until everything is well combined. Form the mixture into small meatballs, about 1 inch in diameter, and set them aside.
  2. Step 2: In a large pot, mix together the chicken or vegetable broth and water. Then, add the soy sauce, rice wine, goji berries, ginger, and smashed garlic. Bring this mixture to a boil, reduce the heat, and let it simmer for about 20 minutes. Don’t forget to taste the broth and add salt as needed!
  3. Step 3: In another pot or skillet, bring water to a boil. Gently drop the meatballs into the boiling water and cook until they float to the surface and are cooked through, about 5-7 minutes. Once they're done, remove them and set aside.
  4. Step 4: Arrange all the prepared vegetables, tofu, meat, and shrimp on a platter. Pour the hot broth into a fondue pot or a large serving bowl. If you have a portable stove or hot plate, keep the broth simmering right at the table.
  5. Step 5: This is the fun part! Diners can add meatballs, vegetables, tofu, and seafood to the simmering broth and cook them to their liking. Serve with assorted dipping sauces for an extra flavor kick!

Notes

If you have leftovers (which I doubt, since it's so good!), you can store them in an airtight container in the refrigerator for up to 3 days. Reheat the broth on the stove and enjoy your hot pot again. The flavors will actually deepen and become even more delicious!
