Ingredients
  

Tempura Batter
  • 1 cup all-purpose flour This is the base for our light batter.
  • 1 cup ice-cold water Helps keep the batter light and crispy.
  • 1 large egg Adds richness to the batter.
  • 1 teaspoon baking soda A little boost for that perfect crunch.
Vegetables and Shrimp
  • Vegetable oil for frying
  • Assorted vegetables
  • Shrimp
  • Salt

Method
 

  1. Step 1: In a mixing bowl, combine the all-purpose flour and baking soda. This mixture will form the base of your batter.
  2. Step 2: In a separate bowl, whisk together the ice-cold water and egg until well combined.
  3. Step 3: Pour the egg mixture into the flour mixture and gently stir until just combined. Don't worry if there are some lumps; this is key for that light texture!
  4. Step 4: Heat vegetable oil in a deep frying pan or pot to 350°F (175°C). A thermometer is super helpful here!
  5. Step 5: Prepare the vegetables by cutting them into bite-sized pieces. If using shrimp, peel and devein them as well.
  6. Step 6: Dip the prepared vegetables and shrimp into the batter, allowing any excess to drip off.
  7. Step 7: Carefully place the battered items into the hot oil, frying in small batches to avoid overcrowding. This ensures they cook evenly.
  8. Step 8: Fry until golden and crispy, about 2-3 minutes. Use a slotted spoon to remove them and drain on paper towels.
  9. Step 9: Season with salt to taste and serve immediately. Enjoy your homemade tempura while it's hot!

Notes

Tempura is best enjoyed fresh, but if you have leftovers, store them in an airtight container in the fridge for up to 2 days. To reheat, pop them in a hot oven for a few minutes to regain their crispiness. Avoid microwaving, as it can make them soggy.
