Ingredients
  

For Udon Noodle Soup
  • 300 g udon noodles fresh or dried
  • 4 cups dashi broth homemade or store-bought
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 1 piece green onion thinly sliced
  • 1 sheet nori cut into strips (optional)
  • Tempura flakes optional

Method
 

  1. Step 1: First, cook the udon noodles according to the package instructions. Once they're done, drain them and set aside.
  2. Step 2: In a pot, heat your dashi broth over medium heat.
  3. Step 3: Add the soy sauce and mirin to the broth, stirring to combine all the flavors.
  4. Step 4: Once the broth is heated through, gently add the cooked udon noodles into the pot. Stir carefully to warm them up.
  5. Step 5: Serve the soup in bowls, garnishing each one with sliced green onion, nori strips, and tempura flakes if you like.

Notes

Store the broth and noodles separately in airtight containers. The soup will last in the fridge for about 3 days.
