  • Sansho pepper
  • Yuzu zest
  • Wasabi
  • Yomogi
  • Katsuobushi
  • Nori
  • Miso
  • Soy sauce
  • Mirin
  • Sesame seeds

Method
 

  1. Step 1: Start by rinsing the shiso leaves under cold water and pat them dry. You can chop them finely or leave them whole for garnish.
  2. Step 2: Next, take your sansho pepper and grind it using a mortar and pestle until it becomes fine. The aroma will be incredible!
  3. Step 3: Now, zest your yuzu and set it aside. This will add a bright, citrusy note to your dish.
  4. Step 4: If you're using fresh wasabi, grate it finely now. If you're using paste, make sure it's ready to go.
  5. Step 5: Rinse the yomogi leaves and chop them finely. If you can't find fresh, dried yomogi will work just fine.
  6. Step 6: Next, prepare the katsuobushi by lightly toasting it in a dry skillet to enhance its flavor. Just a minute or two will do!
  7. Step 7: Cut the nori sheets into small strips or squares, perfect for adding texture.
  8. Step 8: In a bowl, combine miso, soy sauce, and mirin to create a delicious sauce.
  9. Step 9: Mix in the toasted sesame seeds for added crunch.
  10. Step 10: Finally, combine all the herbs and spices in a serving dish or use them to enhance various dishes as desired. Enjoy!

Store any leftover mixture in an airtight container in the fridge. Use within a week for the best flavor.
