  • 1 cup dried shiso leaves gives Yukari its unique flavor
  • 1/2 cup salt preserves the shiso and enhances taste

  • 2 tbsp sugar balances saltiness

Method
 

  1. Step 1: Rinse the dried shiso leaves thoroughly to remove impurities.
  2. Step 2: Spread the rinsed shiso leaves on a baking sheet and dry them in a low oven (around 175°F or 80°C) for about 30 minutes, or until completely dry and crisp.
  3. Step 3: Once dried, crumble the shiso leaves into a bowl. You can use your hands or a mortar and pestle for this!
  4. Step 4: Add the salt, toasted sesame seeds, sugar, and red pepper flakes (if using) to the crumbled shiso.
  5. Step 5: Mix all the ingredients thoroughly until well combined.
  6. Step 6: Store the Yukari in an airtight container in a cool, dry place.
