Ingredients
  

For the Ramen Broth
  • 4 cups chicken broth
  • 2 cups water
  • 2 tbsp shio (Japanese sea salt)
  • 1 tbsp soy sauce
  • 1 tsp mirin
For the Ramen
  • 4 servings ramen noodles fresh or dried
  • 2 green onions sliced for garnish
  • 2 soft-boiled eggs halved
  • 1 cup sliced chashu pork for topping
Garnishes
  • Nori (seaweed)
  • Bamboo shoots
  • Bean sprouts

Method
 

  1. Step 1: In a large pot, combine the chicken broth and water. Bring to a simmer over medium heat.
  2. Step 2: Add the shio, soy sauce, and mirin to the broth. Stir until the salt is dissolved, and let it simmer for about 5 minutes.
  3. Step 3: In a separate pot, cook the ramen noodles according to the package instructions. Drain and set aside.
  4. Step 4: To serve, divide the cooked noodles among four bowls. Pour the hot broth over the noodles.
  5. Step 5: Top each bowl with sliced green onions, soft-boiled eggs, chashu pork, nori, bamboo shoots, and bean sprouts.
  6. Step 6: Serve immediately and enjoy your homemade Shio Ramen!

Notes

If you have leftovers, store the broth and noodles separately. The broth can be kept in the fridge for up to 3 days.
