Ingredients
  

For the Udon
  • 200 g udon noodles
  • 2 tbsp vegetable oil
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 medium carrot, julienned
  • 1 medium bell pepper, sliced
  • 100 g shiitake mushrooms, sliced
  • 100 g snow peas, trimmed
  • 3 stalks green onions, chopped for garnish
  • 4 cups vegetable broth
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • Salt and pepper to taste
  • Sesame seeds for garnish

Method
 

  1. Step 1: Start by cooking the udon noodles according to the package instructions. Once cooked, drain them and set aside.
  2. Step 2: In a large skillet or wok, heat the vegetable oil over medium heat.
  3. Step 3: Add the sliced onion and minced garlic. Sauté until the onion becomes translucent, about 3-4 minutes.
  4. Step 4: Next, toss in the julienned carrot, sliced bell pepper, and shiitake mushrooms. Cook for about 5 minutes, stirring occasionally, until the vegetables are tender.
  5. Step 5: Stir in the snow peas, and cook for an additional 2 minutes to keep them crisp.
  6. Step 6: Pour in the vegetable broth and soy sauce, bringing the mixture to a gentle simmer.
  7. Step 7: Add the cooked udon noodles and drizzle with sesame oil. Toss everything together until well combined and heated through.
  8. Step 8: Season with salt and pepper to your liking.
  9. Step 9: Finally, garnish with chopped green onions and sesame seeds before serving. Enjoy!

Notes

Feel free to swap out the vegetables for what you have on hand. Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat with a splash of water or broth.
